I'm going to have to try some and post for you! (I know, I know... not the same) You have my sympathy!<br /><br />Buffalo - cooking is for mad scientists. You are right, baking requires precision. But you can fool around with the "inserts" for instance, chocolate and cherries instead of raisins and pecans? As far as my baking skills, I'm still an amateur, cooking is my strength, but I'm learning, learning...<br /><br />Rachel - The preheating is really all about your oven. My oven preheats in 10 minutes. I think they are using these long times because most home ovens take that long to reach very high temps of 450 - 500. The authors don't take into consideration "resting" time - just the time you are handling the dough - so yes, a misnomer. But still, hot, fresh bread from your very own oven? Yippee!! <br /><br />Tamis - I've missed you! let's see: no shoveling, no boots, no hats, scarves, gloves. I'll meet you at 5:00 on the deck for that wine. The thing is, for me, that it doesn't *really* take five minutes - you have to plan ahead to preheat the oven for AGES, not to mention the actual cooking time. So I'm abivalent.
